This is the perfect breakfast when you have overnight guests, if you have a brunch planned… or if you just love breakfast!
Baked French Toast Casserole can be prepared the night before or made the morning of. It’s so simple to make, yet always a big hit!
Ingredients:
4 cups of cubed pieces of bread (I used almost 2 loaves of Udi’s Cinnamon-Raisin bread, the pieces are small!) *You can use your favorite gluten free bread!
6 eggs
3 cups of milk (I used Almond milk)
1 teaspoon vanilla extract
1 teaspoon cinnamon
powdered sugar, blueberries and maple syrup to top with, optional
Instructions:
Arrange bread in a lightly greased 9×13 baking dish and set aside.
In a bowl, whisk together your eggs, milk, vanilla and cinnamon; pour over bread. Cover and refrigerate overnight. *You can also make this the morning of and not have it sit overnight!
In the morning, preheat your oven to 350 degrees.
Remove casserole from fridge and bake for 45-55 minutes. After about 30 minutes check to see if the top is getting too brown, if so cover with foil and continue baking.
Remove and let stand for abut five minutes. You can top with powdered sugar, blueberries and maple syrup.

I’m not usually a fan of french toast because it seems soggy – this looks like it holds up good & stiff. I’ll have to pin this one to save for later
