Apple Pie Crumble Bars

I love to bake, but hate following complicated recipes. I always try to modify any recipe to make it simple with not a ton of ingredients. This hands down has to be the easiest thing I’ve baked , and let me tell you no one will know how easy it really is because it looks impressive! Once you make this, you will no longer make complicated apple pies! To top it off, this will make your kitchen and whole house smell delicious. 🙂

Ingredients:

1 box Betty Crocker gluten free sugar cookie mix
1 egg
½ cup butter (1 stick), softened not melted
1 Tbsp water
1 tsp gluten free vanilla
2 (21 oz) cans of apple pie filling (Comstock is gf)
1 tsp brown sugar
½ tsp sugar
¼ tsp cinnamon

Instructions:

Preheat oven to 325 degrees.

Grease a  9×13 baking dish. Set aside.

In a mixing bowl, stir together cookie mix, egg, softened butter, and vanilla until soft dough forms.

Evenly spread out a thin layer of cookie dough into your prepared pan (don’t use all the dough, just enough to spread over bottom of pan).

Pour both cans of pie filling evenly over dough.

Sprinkle extra dough evenly over pie filling.

In a small bowl, mix together brown sugar, sugar, and cinnamon. Sprinkle sugar mixture on top.

Bake for 30-35 mins or until dough is cooked.

Remove from oven and cool on counter.

Cut into squares or scoop into a bowl.

This would be super yummy served with vanilla ice cream!
