Super Green Smoothie

greensmoothieI love coffee. End of story. But unfortunately it doesn’t always love me. I drink it almost every morning…1-2 cups. Sometimes it makes me jittery and gives me insomnia… yes even if I stop drinking it by 9am! But, I love the boost of energy it gives me!

Now I try not to drink it everyday. The days I don’t drink I make my “super green smoothie” and guess what?! It gives me more energy than coffee! Yup! Even better, my energy lasts longer and I don’t crash like I do with coffee. But, I love the taste of coffee so I won’t completely give it up!

If you’re looking for a boost of energy (that’s super healthy too), well here you go!

Ingredients:

1 cup of water
1 piece of kale, trim center step out
I celery stalk, chopped
I cucumber, peeled and chopped
1 slice of fresh ginger
A handful of fresh parsley
½ lemon, juice of
1 green apple, peeled and chopped
1 banana

Instructions:

Place water, kale, celery, and cucumber in blender and blend until smooth. Stop blender, remove lid and add apple, banana, ginger, parsley and lemon juice. Blend again until smooth and you like the consistency. If you like it thinner, add more water.

 If you use a standard blender (like I do), it may be a little foamy. I’ve learned that it turns out best when I make this the night before and store it in a large airtight mason jar. The foam settles over night. You can store this in the refrigerator up to three days in an airtight jar.
