We’re all about simple, healthy, yet tasty dinners around here! I might have mentioned it before, but I ask Erik when I make something new if it’s a “once a week, once a month or once a year meal”. This helps to give me honest feedback. This one skillet sausage broccoli & cauliflower rice was a “once a week!” from him.
This meal is so simple to make and the best part is the little amount of dishes involved to clean! (I’ve noticed a trend that Erik gives “once a week” scores to one pan meals… maybe because he’s on dish duty!? HA)
One Skillet Sausage Broccoli & Cauliflower Rice

Ingredients
- 1 pack of chicken sausage, cut into circles
- Frozen cauliflower rice
- 1 bundle of broccoli, cut into small pieces
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 1/2 cup fresh parsley, chopped
- Salt & pepper, to taste
- Olive oil
Instructions

Heat olive oil over medium-high heat.

Add sausage and reduce heat to medium. Cook sausage until browned. Remove from pan and set aside.

Add onion to pan and sauté until translucent. Add garlic and continue to sauté.

Add broccoli to pan and mix everything together so broccoli gets coated with olive oil. Let cook for a few mins, until barely fork tender. Stir occasionally.

Once broccoli is a little more than halfway cooked, add cauliflower rice and stir everything so it’s evenly mixed and allows cauliflower to cook- a few mins.

Add sausage back to pan.

Top with parsley and stir everything together.
