{Slow Cooker} Buffalo Chicken Sandwich

Just the thought of buffalo sauce makes my mouth water! Needless to say I’m a big BIG fan of buffalo anything (wings, dip…and now sandwiches!).

My goal has been to use my slow cooker more on days I work late, and I’m so glad I’ve been doing that!

You guys, this is seriously the easiest thing I’ve made and no one will know how little work they take… because they look good and taste even better!

These buffalo chicken sandwiches were a big hit in our house, and I hope they’ll be in yours too!

Ingredients:

2-3 skinless, boneless chicken breasts
1 (12oz) bottle of buffalo wing sauce, divided (Frank’s is GF) 
½ (1 oz) package of dry ranch dressing (Hidden Valley is GF)
2 packs of sandwich rolls (I used Schar Ciabatta)
Shredded cabbage, carrots, green onions, and blue cheese (or ranch) dressing to top

Instructions:

Place chicken in slow cooker, and pour about ¾ of the buffalo sauce and the ranch mix in. With a spoon mix it all around. Cover and cook on low for 6-7 hours.

Once the chicken is cooked, shred the chicken finely and pour in the rest of the wing sauce.

Serve on rolls, top with cabbage, carrots, green onions and drizzle with blue cheese (or ranch) dressing.

That’s it! Super easy!

      I’m just getting into using my slow cooker. We got one for a wedding gift and I’m totally loving coming home from work with dinner ready!
