These frozen chocolate almond butter banana bites are the perfect sweet, yet healthy treat to cool you off all summer!
I’ll admit it, I’ve never been a huge chocolate person… what?! I know! But, ever since being pregnant I’ve suddenly been craving it… and enjoying it! Since I’m trying to be mindful of what I eat and stick to healthier choices during this pregnancy, I’ve been eating fruit any time I get a sweet tooth (bring on all the fruit… I can’t get enough!).
That is when one day I got the brilliant idea to dip my fruit in melted chocolate! Ha. If you follow me on Instagram, you probably saw on my stories that I raided my fridge to find any fruit I had so I could dip it in chocolate!
Being pregnant during the Arizona summer heat is not ideal…we’re talking 118 degree temps recently! One hot afternoon, when my sweet tooth kicked in, is when I decided to make these frozen chocolate almond butter bites and boy am I glad I did! (side note: Erik is LOVING my cravings and experiments in the kitchen! Ha)
These frozen chocolate almond butter banana bites are the perfect little frozen treat to cool me off and satisfy my sweet tooth. Best part of all, they’re healthy! I use pure dark chocolate, making these a healthier choice.
They’re simple to make, only have four ingredients that are in most kitchens already and are melt-in-your-mouth good! I hope you love them as much as we do!
Frozen Chocolate Almond Butter Banana Bites
- 3 bananas
- ⅓ cup almond butter
- ⅓ cup dark chocolate chips
- 1 ½ tsp coconut oi
Line a baking sheet with parchment paper
Peel and slice bananas into ¼ inch thick rounds
Spread almond butter on one slice of banana and top it with another banana, creating a little sandwich and place on parchment paper
Continue doing this until banana slices are used
Place baking sheet with banana bites in freezer to harden for about one hour
Once banana bites are frozen, place chocolate chips and coconut oil in a microwave safe bowl and microwave for 30 second intervals, stirring each time, until melted
Remove frozen banana bites from freezer and dip each piece in melted chocolate so half of the bite is coated
Place baking pan with chocolate covered bites back into the freezer for about 30 minutes or until chocolate hardens
Remove from the freezer and enjoy or place bites into a freezer safe tupperware. They will last 1-2 months in the freezer.
You can use peanut butter or any nut butter in place of almond butter.
