Typically I’m not a fan of sweet and savory together (no chicken and waffles for me!), but this one-pan balsamic chicken and veggies just has a hint of sweetness thanks to the maple syrup and it really works!
This is a simple meal you can throw together on a busy weeknight and have a healthy, tasty dinner ready in less than 30 mins!
One-Pan Balsamic Chicken and Veggies
This is a simple meal you can throw together on a busy weeknight and have a healthy, tasty dinner ready in less than 30 mins!
Ingredients
- 1/3 cup balsamic vinegar
- 1/4 cup olive oil
- 2 Tbsp Pure maple syrup
- 1 small red onion, cut into 1-inch pieces
- 1 yellow squash, cut into 1-inch pieces
- 1 zucchini, cut into 1-inch pieces
- 1 cup baby carrots, cut in half lengthwise and then in half
- 1 red bell pepper, cut into 1-inch pieces
- 1 dry pint cherry tomatoes
- 1 1/2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
- salt and pepper, to taste
- 1 tsp garlic powder
- 2 tsp dried oregano
- 2-3 Tbsp fresh parsley, to garnish
Instructions

Preheat oven to 450 degrees

In a small bowl, whisk balsamic vinegar, olive oil and maple syrup.

Add vegetables and chicken to pan.

Pour balsamic mixture over chicken and veggies and then add salt, pepper, garlic powder and oregano. Mix so everything is evenly coated.

Place in the oven and bake for 20-22 mins, stirring everything halfway through, or until chicken reaches internal temp of 165F.

Top with fresh parsley and serve hot.
