You know I’m all about one-pan dinners and this honey garlic chicken stir fry is no exception! You can have a healthy, tasty dinner ready start to finish in less than 30 minutes! Best part, the clean up is minimal!
Honey Garlic Chicken Stir Fry
This Honey Garlic Chicken Stir fry is a simple, versatile and healthy dinner! You can take this recipe and swap in different vegetables and even meat, without changing the ease or flavor of the meal!
Ingredients
- Olive oil
- Salt and pepper, to taste
- 1 lb boneless skinless chicken breasts, cut into 1 inch pieces
- 3 carrots, peeled and thinly sliced
- 1 large head bok choy, chopped
- 1/2 cup honey
- 1/4 cup coconut aminos (or gluten free soy sauce)
- 3 garlic cloves, minced
- 1 tsp fresh ginger, minced
- green onions, to garnish
Instructions

Season pieces of chicken with salt and pepper.

Add olive oil to pan over medium heat.

Once oil is hot, add chicken to pan and cook 3-4 mins on each side until golden brown and cooked through.

Remove chicken from pan, place on plate and cover.

Add more olive oil to pan if needed and saute carrots for 2-3 mins.

Add bok choy to pan and let cook for another 2 mins until fork tender.

While vegetables are cooking, in a small bowl whisk together honey, coconut aminos, garlic and ginger.

Add the cooked chicken to the pan and pour in sauce. Cook until sauce thickens a little- about 3 mins.

Remove from the pan and serve over rice or cauliflower rice, garnish with green onions.
