I don’t know about you, but I have to have a salad every night with dinner regardless of what I cook. I love to mix it up and make different types of salads.
My favorite is my cucumber tomato salad, maybe it’s the Greek in me! I decided to modify the traditional recipe and came up with this one! I make this when I cook Mexican food. The cilantro and lime fit with Mexican food so well!
Ingredients:
2 cucumbers, peeled and sliced
½ basket mini heirloom tomatoes, cut in half
¼ red onion, thinly sliced
¼ cup fresh cilantro, chopped
¼ tsp garlic powder
½ tsp oregano
Salt and pepper, to taste
A pinch of cayenne pepper
¼ cup olive oil
1 lime, juice of
*Optional: avocado slices
Instructions:
Place all cut ingredients in a bowl. Add in seasonings, olive oil and lime juice. Toss until evenly mixed.
