I’ve never met a one-pan dinner I didn’t love and this meal was no different! Total game changer for fajitas!!
If you know me, you know I’m obsessed with one-pan/pot/etc dinners… in all honesty because they’re simple to make, quick and easy to clean up!
I literally made these sheet pan steak fajitas last night (if you follow me on Instagram or Facebook then you saw!) and I had to immediately type this up to share with you because I was so excited about them and I knew you would be too!
I promise, you’ll never make fajitas any other way again! You’re welcome! 🙂
Sheet Pan Steak Fajitas
I’ve never met a one-pan dinner I didn’t love and this meal was no different! Total game changer for fajitas!!
Ingredients
- 1 Yellow Squash
- 1 Zucchini
- 1 Green Bell Pepper
- 1 Orange Bell Pepper
- 1 Red Onion
- Olive Oil
- Salt & Pepper to taste
- 1 tsp Oregano
- ¼ tsp Garlic Powder
- 1 lb Flank Steak
- 1 tspCumin
- 2 tsp Chili Powder
- 1 tsp Paprika
Garnish:
- Cilantro
- Lime Wedges
- Avocado
Instructions
-
Preheat oven to 425 degrees.
-
In a bowl, add cut squash, zucchini, bell pepper and onion. Drizzle olive oil and add salt, pepper, oregano and garlic powder. Toss so everything is evenly coated.
-
In a small bowl add salt, pepper, cumin, chili powder, paprika and a small drizzle of olive oil. Mix it all together to form a paste. Rub it on both sides of the meat.
-
Line sheet pan with parchment paper (for easy cleanup!). Lay your meat in the center of the pan and then arrange your veggies all around it (try not to overlap)
-
Put in oven for 13-15 mins then broil 2-3 mins to brown top or until steak reaches your desired doneness.
-
Take the pan out of the oven and let cooked meat rest 10 minutes then cut into strips. Top with lime juice, cilantro, avocado and any other toppings you like!
-
Serve with tortillas or over rice/cauliflower rice
Enjoy!
