Sheet Pan Cod, Bok Choy & Carrots

This sheet pan fish and veggies is in constant rotation around here- not only is it quick and simple to make, it’s an easy clean-up & so tasty!
Servings 2


  • Cod fillets
  • Salt & pepper
  • Cayenne garlic spread
  • Bok choy and carrots cut into small pieces (any veggies will work!)
  • Olive oil
  • Rice rice noodles, or cauliflower rice
  • Coconut aminos or gf soy sauce
  • Green onions to garnish


  1. Preheat oven to 375 degrees
  2. Sprinkle salt and pepper on cod, then scoop garlic spread onto cod and evenly cover entire surface
  3. Arrange bok choy and carrots on pan surrounding fish
  4. Drizzle veggies with olive oil and season with salt and pepper
  5. Bake for 15 mins then broil for 3-4 mins (adjust time according to thickness of fish)
  6. Serve bok choy, carrots and cod over rice/rice noodles/cauliflower rice, drizzle with coconut aminos (or soy sauce) and then top with green onions

Recipe Notes

I use he brand Majestic Garlic ( I find it at Whole Foods) but any type of flavored garlic spread will work if you can’t find this brand/flavor
