Sheet Pan Steak Fajitas

I’ve never met a one-pan dinner I didn’t love and this meal was no different! Total game changer for fajitas!!

Ingredients

  • 1 Yellow Squash
  • 1 Zucchini
  • 1 Green Bell Pepper
  • 1 Orange Bell Pepper
  • 1 Red Onion
  • Olive Oil
  • Salt & Pepper to taste
  • 1 tsp Oregano
  • ¼ tsp Garlic Powder
  • 1 lb Flank Steak
  • 1 tspCumin
  • 2 tsp Chili Powder
  • 1 tsp Paprika

Garnish:

  • Cilantro
  • Lime Wedges
  • Avocado

Instructions

  1. Preheat oven to 425 degrees.
  2. In a bowl, add cut squash, zucchini, bell pepper and onion. Drizzle olive oil and add salt, pepper, oregano and garlic powder. Toss so everything is evenly coated.
  3. In a small bowl add salt, pepper, cumin, chili powder, paprika and a small drizzle of olive oil. Mix it all together to form a paste. Rub it on both sides of the meat.
  4. Line sheet pan with parchment paper (for easy cleanup!). Lay your meat in the center of the pan and then arrange your veggies all around it (try not to overlap)
  5. Put in oven for 13-15 mins then broil 2-3 mins to brown top or until steak reaches your desired doneness.
  6. Take the pan out of the oven and let cooked meat rest 10 minutes then cut into strips. Top with lime juice, cilantro, avocado and any other toppings you like!
  7. Serve with tortillas or over rice/cauliflower rice
