Slow Cooker Chicken, Potatoes & Green Beans

Throw everything into your slow cooker, turn it on, let it cook and have a complete meal ready at the end of the day!

Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 1.25 lbs red potatoes diced
  • ½ lb fresh green beans trimmed
  • ½ red onion thinly sliced
  • 4 garlic cloves minced
  • Salt & pepper to taste
  • 1 Tbsp oregano
  • ½ tsp chili flakes *adjust according to heat preference
  • Olive oil
  • 1 15 oz can of tomato sauce

Instructions

  1. Place the chicken breasts in the middle of the slow cooker.
  2. Add the potatoes on one side of the chicken (you will need to create a mound).
  3. Add the green beans to the other side of the chicken.
  4. Season everything with salt, pepper, oregano, chili flakes and minced garlic.
  5. Top the chicken with red onions.
  6. Generously drizzle olive oil over everything.
  7. Add the entire can of tomato sauce and stir around so everything gets coated.
  8. Place lid on slow cooker and and set to low for 7 hours or high for 4 hours- don’t open lid while cooking.

  9. Once finished cooking, stir everything before serving.
