Gluten Free Gingerbread Loaf

This Gingerbread loaf is moist and perfectly spiced all while being gluten free, dairy free, egg free and refined sugar-free!

Ingredients

  • 2 cups gluten free flour *I always use Cup4Cup
  • 2 tsp ground cinnamon
  • 2 ¼ tsp ground ginger
  • 1 tsp ground cloves
  • ½ tsp ground nutmeg
  • 1 tsp salt
  • 1 tsp baking soda
  • ¼ cup + 2 Tbsp olive oil
  • cup maple syrup
  • 1 cup coconut sugar
  • 1 cup unsweetened applesauce
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees. Grease a 9 inch bread loaf pan and set aside.
  2. In a medium bowl, whisk together flour, cinnamon, ginger, cloves, nutmeg, salt and baking soda. Set aside.
  3. In another bowl mix olive oil, maple syrup, coconut sugar, applesauce and vanilla extract until evenly combined.
  4. Add dry ingredients to wet ingredients and mix until blended.
  5. Pour batter into your prepared pan and bake for 55-60 minutes or until toothpick comes out clean when inserted.
