Gluten Free Banana Oatmeal Muffins

These moist banana oatmeal muffins make for the perfect healthy quick breakfast on the go, all while being gluten free and dairy free.

Ingredients

  • 1 ½ cups old fashioned oats
  • 1 ¼ cup gluten free flour
  • ½ cup coconut sugar regular sugar will work too
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 egg
  • ¼ cup oil
  • 1 tsp vanilla
  • 3 overripe bananas mashed

Instructions

  1. Preheat oven to 375 degrees.
  2. Add 12 muffin liners to baking pan.
  3. In a large bowl, mix oats, flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
  4. In a smaller bowl, mix the egg, oil, vanilla and bananas.
  5. Add to dry ingredients and stir so everything is evenly mixed.
  6. Divide batter into muffin tins.
  7. Bake for 20 minutes or until a toothpick comes out clean.
