Grilled Balsamic Eggplant

This grilled balsamic eggplant makes for the perfect quick, yet healthy side dish all summer long!


  • 1 large eggplant
  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt & pepper, to taste
  • cup Italian parsley, chopped


  1. Slice eggplant into ¼ inch rounds.
  2. In a small bowl combine olive oil, vinegar, garlic, oregano, salt and pepper.
  3. Add eggplant and marinate to a Ziploc bag (or shallow pan) seal and allow to marinate for about 15 minutes.
  4. Heat your grill (or grill pan) to medium high. Lightly oil the grill grates.
  5. Add eggplant to the grill for about 3 minutes per side, or until grill marks appear and eggplant is cooked.
  6. Remove from grill, brush on any leftover marinate and top with fresh parsley.
