This slow cooker sweet potato chili is a favorite around here all year around! I don’t know about you, but to me there is no “slow cooker season”. Slow cooker season is any time you’re busy and want to come home to a delicious home cooked meal!

Slow Cooker Sweet Potato Chili

In all honesty, I didn’t grow up eating chili. It’s just not something my mom ever made, so it’s not something I ever cared to eat. I think I was doing my first round of Whole30 when I was looking for new recipes to try/modify is when I came across “sweet potato” chili and I’ve never looked back!

I don’t eat legumes, so traditional chili with beans is not something I’d eat but trust me, if you love traditional chili… I say give this a try. Not only does it have sweet potato, but also butternut squash, all the traditional flavors you love in chili and is loaded with toppings!

Erik grew up with chili, and let me tell you… he requests this ALL the time!

Slow Cooker Sweet Potato Chili

Ingredients

  • 1 Tbsp Olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 4 garlic cloves, minced
  • 1 lb ground beef
  • 1 lb ground turkey
  • 2 carrots, chopped
  • 2 celery, chopped
  • 1 sweet potato, diced
  • 1 cup butternut squash, diced
  • 2 Tbsp tomato paste
  • 8 oz tomato sauce
  • 1 14oz can diced tomatoes
  • 2 cups beef broth
  • Salt & pepper, to taste
  • 1 Tbsp Cumin
  • 1 Tbsp Oregano
  • 1 Tbsp Chili powder
  • ¼ tsp cayenne pepper

Optional garnishes:

  • Red onions
  • Green onions
  • Cilantro
  • Jalapeno
  • avocado

Instructions

  1. Over medium heat, heat olive oil in pan. Add onions and bell peppers to pan, stirring for about 3 mins.
  2. Add carrots, celery and garlic. Saute until vegetables are softened.
  3. Add ground turkey and ground beef, brown the meat breaking it up with a spatula.
  4. When no longer pink, stir in the salt, pepper, cumin, oregano, chili powder and cayenne pepper.
  5. Transfer meat/veggie mixture to slow cooker.
  6. Add sweet potato, butternut squash, tomato paste, tomato sauce, diced tomatoes and beef broth. Stir so everything is evenly combined.
  7. Set slow cooker to low and cook for 6-7 hours
  8. When done, ladle into a bowl and top with red onions, green onions, cilantro, jalapeno and avocado.
