gluten free mimosa cupcakes

Cupcakes and mimosas are two of my favorite things! Why not combine them into one?!

This is the perfect sweet treat to spoil mom this Mother’s Day! These don’t need any explanation, the name speaks for itself! They’re the perfect subtle taste of both orange juice and champagne mixed into a fluffy, sweet cupcake!

Ingredients:

2 ¾ cups gf flour (I always use Cup4Cup)
3 tsp. baking powder
1 tsp. salt
2/3 cup unsalted butter
1 ½ cups sugar
2 eggs
2 tsp vanilla extract
¾ cup champagne
½ cup orange juice
Zest from 2 oranges

Frosting:
1 carton of vanilla frosting
1 Tbsp grated orange zest
Sprinkles or anything else for decoration.

Instructions:

Preheat oven to 350 degrees. Insert liners into cupcake pan and set aside.

Mix flour, baking powder and salt together in a bowl, set aside.

Cream butter and sugar until fluffy. Add eggs one at a time. Add in orange juice, zest, vanilla extract and champagne. Then add in dry ingredients and mix until combined.

Fill liner 2/3 full and bake for 20-15 minutes or until toothpick inserted comes out clean.

For the Frosting:

Set half orange zest aside. Fold in remaining orange zest into the frosting. Frost cupcakes and sprinkle with remaining zest. Top with your favorite sprinkles.

    I made these cupcakes and the taste is delicious, but they were very dense like a muffin. Do you have any suggestions for making them fluffy?
